Hello humans!
Holiday season is upon us once again! my what a year 2012 has been?!?! it has been an awesome year full of eye opening experiences and meeting some simply awesome people! ( shout out to the MPH crew and the food bloggers @ the picnic!) i wish you guys an awesome awesome break from work, study and whatever causes your hair to frizz and enjoy a drink... or 2 or more... ;)
this is actually quite a delayed post as i first made these back in early december but i made them again with christmas cookie cutter last week so decided to blog about it, so what is so awesome about this humble humble cookie? well its a classic recipe, a family favourite and perfect for mailing overseas to dear friends and loved one, it makes celebrating with people across the globe a lot better! (and if you put them on skype, its like inviting them over for the party too!)
ingredients
125g softened unsalted butter
1/3 cup brown sugar
1/3 cup caster sugar
1 egg, lightly beaten
1 teaspoon vanilla essence
2 Tbsp of milk
½ cup (150g) peanut butter ( you can put more in if you want!)
1½ cups (225g) plain flour, sifted
1 teaspoon baking soda
½ cup (75g) chopped unsalted peanuts (optional, i didn't put them in as sending them as i was sending them overseas )
200g chocolate, chopped (or use choc chips!)
1. Preheat oven to 200°C. Place a well greased sheet of baking paper on a baking tray.
2. sift flour and baking soda
Cream together butter and peanut butter. Add egg, vanilla essence and milk, lightly combine.
add in the sugars
mix well with hand mixer until smooth
Place balls of mixture onto prepared tray. Flatten slightly and bake for 15 minutes or until browned (see note). Cool slightly before turning onto a cooling rack.
